We Eat | Turkey Dogs & Cheesy Cheddar Scramble

Breakfast {food} for dinner.  Yes please!  We are one to pull out the waffle maker at least once a month to whip up some fluffy cakes with syrup filled pockets.  And lets be real for a second.  Eggs aren't just a breakfast food.  I can pretty much eat a veggie omelet any time of the day.   

It took a couple times of offering eggs to the girls before they would actually take more than three bites. Then randomly Jolie swiped a handful of eggs off my plate one afternoon at brunch and the rest was history.  The girl loves eggs.

When thinking of something other than pork sausage or bacon to offer my girls.. 
..something on the healthier side..
Turkey dogs.  Nitrate and chemical preservative free!  
Low in fat, too.
I like these by Applegate Farms.  Picked 'em up at Target.

Turkey Dogs 
Cheesy Cheddar Scramble

3 whole eggs
splash of whole milk (we buy organic) 
pinch of salt
pinch of black pepper
2 turkey dogs, sliced
1/4 cup shredded whole milk cheddar cheese

Whip first 4 ingredients in a small mixing bowl and pour into a heated pan coated in canola cooking spray.  Allow to cook, stirring with a rubber spatula to scramble.  Once eggs are soft cooked, throw in your sliced hot dogs and sprinkle with shredded cheese.  Continue to warm until cheese is melted and eggs are fully cooked.  
In less than 10 minutes dinner is served!
I often save this quick dinner for busy evenings and I need to get something in their bellies quickly before we head out the door. 


We aren't far from introducing utensils to Parker and Jolie. 
They absolutely despise getting their hands dirty.

Many have asked for a detailed post regarding meal planning for my little birds and I promise it is coming.  I am still compiling a list and will get it up for your viewing pleasure soon!

We Eat | Turkey Meatballs & Guac

Guacamole.  My children do that grunt/laugh/cry thing that babies do if they are hungry/excited when they see me pull out the limes and avocados.

I am totally serious.  Can you picture my serious face?

Good.

My weekly grocery list always consists of precisely two bags of Haas avocados, 2 limes, 2 Roma tomatoes, 1 red onion, 2 jalapeƱos, and a bunch of fresh cilantro.  Theres your ingredient list! Now just throw all that in a bowl and call it guac-a-good.

Super easy.  Super fresh.  Talk about clean eating.
Moving on to the next amazing part of this meal.  
Turkey Meatballs.  
This momma had a super proud moment while shopping with two little birds.  
She whipped this recipe up in her brain on whim and hoped for the best.

Ingredients:
20 ounces lean (97/7) ground turkey * 1 (8 ounce) can no salt added tomato sauce * 1 large egg * 1 cup whole wheat bread crumbs (you can also use ground oats or whole grain cereal) * 3/4 cup shredded mozzarella cheese * 1 tsp garlic powder * pinch of salt and pepper

Preparation:
Preheat your oven to 400 degrees.  In a large bowl combine all ingredients until well mixed.  Prepare 1-inch meatballs and arrange them evenly spaced on a foil-lined rimmed baking sheet coated with canola cooking spray.  Spray the tops of the meatballs with canola cooking spray and bake for 25 minutes until no longer pink.

This recipe make 40 meatballs.  My little birds ate three each.. that means I had 34 left.  They freeze well, so I tossed the left overs in a freezer bag and away they went!  I pull out 4-6 at a time and pop them in the microwave to heat for about 30-45 seconds, and here we have another lunch or dinner.

I always hope for a leftover nibble or two when we have this for dinner.  
I deserve a snack while I clean up their guacamole mess.. don't you know?
 Jolie will eat her weight in guacamole.  Here is my serious face again.
Chow time.  Clearly she hates it.   


Occasionally it takes some coaxing to get this little bird to eat meat of any kind.  
Once momma shows her it is yummy she will pick it up herself.


 The only thing about having guacamole for dinner..


I guarantees a bath.

We Eat | Cheesy Broccoli Mac

The girls are super into veggies.  

Not so much to meats, and not so much the pasta.  
Hardly at all.   

We are still working on their love for those things, but in the mean time I recently found that they will  gobble up an entire bag of this broccoli macaroni and cheese by Green Giant (Valley Fresh Steamers).  I usually buy the steamer veggie bags for myself to take for lunch at work (throw in some rotisserie chicken or deli turkey and you have yourself a meal!), but experimented with their tastebuds and they loved them!

 Apple slices for dessert!  My children cry for apples any time they are in eye's view.  We have to rush through the 'apple section' of the produce area or else they are climbing out of the buggy to help themselves.

We Eat | PB Toast

I LOVE peanut butter.  I ate it every single day while I was pregnant.  

Times three.  

I still eat it at least once a day, and I've now got to hide my peanut butter toast when I eat it or I'll be sitting on the kitchen floor with two babies in my lap waiting for every third bite.

We Eat | Fish Sticks & Broccoli

Since getting my new camera I've been having fun {probably too much fun..} taking pictures of everything.  

Literally.

  You know, because everything is interesting enough to document.  I have found myself taking a lot of pictures while Parker and Jolie are eating.  The fact that they are still and in one place is most likely the reason I take the opportunity to snap a few (or eleven..).

I get a ton of questions about food. In particular, the food that I feed my little birds so I thought it would be fun to {attempt} sharing what 'We Eat'.

We eat A LOT of fish sticks. I mentioned in their 13 month post that this is probably their most favorite food on the planet.  Fish sticks and peanut butter.  Not served together {gross}, but I wouldn't put it past Jolie to gobble it up if I did.

Plain ol' baked fish sticks.  Nothing special about them.  
They come in a box in the freezer section at WalMart.  And they are GOOD.
 Miss Parker.  Attempting every which way to not to get her hands dirty, eating one tiny bite at a time.
 Chicken or fish today, mom?  

 My little veggie lover- almost always eats the color on her tray first.
 Here Momma- I'll eat the fish and you can eat my veggies for me. #typical.
