Weekend Trip to Austin

This past weekend, Jordan and I made the familiar drive to Austin, for a short trip to visit my family and hang out with good friends. I took a half day on Friday, and we drove to meet my Dad and my youngest brother for dinner at the UT Club on campus.

Saturday morning, Jordan and I woke bright and early for the Texas Round-Up 10K run, starting at the Capitol in the heart of downtown. I ran this race a couple years ago, and rememeber it being so much fun, so when we decided it was time for a visit to Austin, I made plans to run, and even better, Jordan ran with me! Saying the race was 'hilly' is an understatement. Some of them, my knees physically would not allow me to 'run' up them. But, we finished, and we finished together, although Jordan could have had a much better time, he stayed by my side when my knees were giving me troubles!
After the race, and a quick nap, we met up with our friends, Hailey and Justin who met us down in Austin. We ate at a very small place called Hut's Hamburgers, and it was so yummy! We weren't the only ones, either! We went to eat lunch around 3:30pm (we had eaten a rather large and late breakfast after the race) and there was a half hour wait! But, it was so worth it! They have the best fries, and free-range burgers. Justin and I got the longhorn beef, and Jordan got buffalo. This will not be the last time we eat there! :)After lunch we walked to the wonderful Whole Foods, and explored their many aisles and amazing selection of every food imaginable!
Dinner we went to Cantina Laredo, and after a few visits at the one here in Dallas, it has never been my favorite place to eat, but the food was acceptionally yummy Saturday night!

Saturday night was also my middle brother, Patrick's prom. I was so excited to see him all dressed up and handsome! They were eating at a restaurant, before the dance, right up the street from the hotel, so Jordan and I made a stop in to see him and his girlfriend. I walked in and made a round of the place and couldn't find him anywhere! I was pulling out my phone to call him, and here he comes, so big and so grown up. I about lost it, and could barely hold back the tears. I miss him so much, and I hate that I am missing out on him growing up so quickly, but I am very glad I got to see him on this big night. I have about 3 inch heels on in this picture..and thank goodness..if I didn't I would be making personal friends with his armpits.
It was a fabulous weekend, and I can't wait to go back to see everyone, again. It was the perfect way to end an amazing life changing week. It just keeps getting better. Can't wait to see what's next!

Another Great One from EatBetterAmerica.com

I am beginning to love this website! It offers such good alternatives for meals and desserts, that are balanced and wholesome, too! I tried another recipe earlier this week, Chick Pea and Tomato Curry with Basmati Rice. It was yummy! Jordan liked it too, but he really does like most anything that I place in front of him. A meatless meal, but still so much flavor. I really do like to occasionally add alternate sources of protein into the meals I serve, and this was perfect, and didn't bust the waistline. I'm looking forward to making it again!


I also made Quinoa with Apricots and Pecans to go along with Tilapia and sauteed yellow squash and zucchini last night. That was a winner, too! If you haven't already, check out this website!

Good Friends and Good Food at Babe's Chicken

This past week was our good friend Diane's birthday, the big 2-5! We all decided to go to Babe's Chicken and eat some yummy food..home cooking. Fried Chicken..Catfish..mashed potatoes, corn, biscuits..ect..ect! Let's just say I was OVER stuffed by the end! We had a great time with fabulous friends! Happy Birthday, Diane! Love ya, girl! Even with the Chicken Hat :)

The Results Are In....

I have been waiting since I turned in my applications in February, and I am proud to announce that I am a PRESBY INTERN!!! I am beside myself, as I have been since I logged in this morning at 4am to see if I had been matched into a program. The results were in at 12:01am, but the site crashed! So I went to bed and woke again to check. Out of about one hundred applicants to this program, I was selected along with 7 other girls. The steps to becoming a Registered Dietitian are growing smaller and smaller :)

I am so thankful for my incredible support system. My best friends, family, and of course, Jordan. Everyone was so supportive, and kept reading draft, after draft, after draft of my personal letter and proofreading my application packet for mistakes. I thought they were going to kill me when I would email them with the subject line being 'This is the last one, PROMISE!'..and it definitly was not! Months of work and patience paid off. Thank you. You know who you are. (and who you are not.)

TopChef the Tour

Top Chef is one of my absolute FAVORITE shows to watch. I have faithfully watched since season one, and every season has been nothing short of entertaining and enjoyable! The second I got wind of the TopChef Tour coming to Dallas, I began checking the computer daily for dates/times/TICKETS! I finally found out the date, and then it was just a waiting game for tickets to become available. I literally was the second person to sign up for two tickets! Hey, it landed me in the front row with one of my favorite friends, Rachel!

It was gorgeous weather and the perfect end to a great weekend. Saturday Jordan and I ran in the Fort Worth Zoo 5K, and then had a much needed date night. We saw the movie 'Fast and Furious', which is a MUST SEE, for sure, if you haven't already. It was a great relaxing weekend..a perfect lead into the bittersweet thoughts I have for Monday morning.
12:01am tonight will determine the next 12 months of our lives. Pray for the best!

What a BLAST! Beginning of the race started rough..got a monster cramp within the first mile..I could almost not breath at all. I ran it out, though! It was soooooo cold. The last mile my earbud started to fallout and I couldn't get it back in because my fingers were numb!! It all worked out, and I ran the whole way through to the end. My first race in about 2 years. I have missed it! Now, I'm back, or should I say 'hooked', again.

Kenny's 70th Birthday

I love, love, love to get together with Jordan's family, and when we got the birthday invitation for Jordan's Great Uncle Kenny, I began looking forward to the date! Lara, Kenny's daughter, decided to throw him a surprise 70th birthday, and it made it even more fun to see his smiling face when he walked in and saw everyone. She did good by sending him to the races all day with her hubby, which seems to be his favorite time of year! We had a fun night and Lara and Josh's beautiful home in Frisco.
